Usually, this vineyard is on the cooler side, and getting the Brix where we want them can be a little tricky. We brought in the grapes at 24.5 Brix, just before Halloween. The 2021 heat really did wonders for this smaller harvest. The result is a classic Cabernet with a lighter body and a well-balanced finish—without that jammy, overly sweet finish. It’s got elegant tannins that make it both age-worthy and food-friendly. Juicy, moderate in alcohol and tannins, this wine is a throwback to Cabernets of the ’70s, incredibly refined.
