Don’t let the varietal fool you—this wine is completely dry. You’ll find baked Bosc pear, clove, and hints of spiced honey on the nose that suggest sweetness and set up an expectation that the palate quickly defies. Instead, the wine is bone-dry and mineral-driven, with a clean and crisp, refreshing finish. This was our first time working with this varietal, which is more commonly used for sweet dessert wines. We wanted to highlight its complexity and prove just how versatile it can be.
