The higher Brix (24 vs. 21) gives it extra ripeness, so alongside the brightness of a zippy lemon. You'll find a creamier texture from time in neutral barrels. Think tropical vibes, melon, and cantaloupe. It's still crisp and refreshing, just with a little more roundness and depth.
